There are a variety of meringues from all over the world… The best-known and the easiest to make is the French meringue. You don't need much more besides eggs and sugar that you have to whisk. So why don't we get started?

Ingredients (for 8 people, 20 meringues):
3 egg whites
125g caster sugar (or icing sugar)
a few drops of lemon juice
1 pinch of salt
Utensils:
a whip
a piping bag or a teaspoon
Preparation and cooking:
- Separate the whites from the yolks and let the whites rest for several days in the refrigerator (A week of conservation will allow your meringues to be even more successful!)
- Take them out the night before so that the whites would stay at room temperature before preparing
- In a bowl, put a pinch of salt and lemon juice
- Add the egg whites and whisk on low speed so that they aerate and become frothy
- After a few minutes, add 2 tablespoons of sugar. Beat the mixture and repeat the procedure until the sugar is used up.
- Beat the preparation for about 15 minutes
- With a disposable piping bag and a nozzle, pipe the meringues onto a baking sheet lined with parchment paper
- Bake the meringues, convection heat position at 110*C for 1.5 hours
- Then, you can flavor the meringues with orange blossom water, vanilla extract, etc. It's up to you to be creative!
