Ingredients for 5 people:
- 250g flour
- 125g soft butter/margarine
- 125g caster sugar
- 1/2 lemon zest

Cream the butter until it becomes almost frothy.

Add eggs and sugar, beat them for 10 minutes.

Add the flour and the zest. Then, form a dough with your hand and make a ball with it. Keep it in the fridge (if you have time).

Preheat the oven to 150°C. Take the dough out of the fridge and roll it out to 1/2 cm thick.
5. Choose your favourite cookie cutters and cut the dough into the shapes you like. Space them on the baking tray covered with baking sheets and bake for 12-15 minutes.
6. In a bowl, mix the icing sugar and lemon juice in order to obtain a pasty texture (If the icing is too hard, add some more lemon juice and if it is too liquid, add some more icing sugar). Remember to add a few drops of food colouring.
7. Fill a piping bag with the frosting and outline the sablés. Then, let them dry.
8. Add a few drops of water to the frosting to obtain a more liquid consistency. With a spoon, pour a little icing in the middle of the shortbread and spread.
9. Decorate your sables with a food decorating marker.
