Ingredients for 6 people (about 500g of orangettes):
You could also replace the orange peels with grapefruit peels.
- 3 large oranges
- 250g caster sugar
- 50ml of water
- 400 to 500g of dark chocolate (70% cocoa minimum)
Preparation and cooking:
- Wash the oranges and incise the skin of each citrus fruit. Remove the bark (the thicker it is, the better the orangettes will be!)
- Put them in a large saucepan and boil them with clear water for 5 minutes. Repeat the same operation again.
- Drain the peels and let them cool. Then cut the quarters of bark into strips about 1/2 cm wide. Set them aside.
- In a saucepan, add the sugar and 50ml of water to boil. Immerse the orangettes in it for 5 minutes. Remove the pan from the heat and allow the syrup to cool. Repeat the operation twice to make the orangettes become translucent.
- Once cooled, layer them on a wire rack with parchment paper and let them dry overnight.
- The next day, in a bowl, grate the dark chocolate and melt it in a bain-marie (or in the microwave). Dip the orangettes one by one into the chocolate, turn them quickly so that their entire surface is covered with chocolate.
- Let them drain for a few seconds before placing them on parchment paper. Remove the bowl from fire.
- Sprinkle them with icing sugar and serve hot!
