Ingredients:
• 230g dark chocolate (from 62% to 70% cocoa)
• 70g semi-skimmed milk
• 150g liquid fresh cream
• 35g brown sugar
• 7 egg whites
• 1 pinch of fleur de sel
Utensils:
• an electric whisk
• a saucepan
• two salad bowls
• a spout
• a wooden spatula
Preparation:
Step 1:
Gently melt the dark chocolate in a double boiler.
Step 2:
In a saucepan, bring the milk and cream to a boil. Then, pour the liquid over the chocolate in three portions while stirring with a whisk.
Let this ganache cool in a bowl.
Step 3:
Meanwhile, gently whip the egg whites. At medium speed, start beating the egg whites. When they become foamy, put the whisk at maximum speed for about fifteen seconds.
Step 4:
In another bowl, pour the sugar and egg yolks. Then, use the electric whisk to mix them and add it to the ganache.
Step 5:
Using a wooden spatula, gently fold in a third of the whipped egg whites with the ganache. Mix the ingredients and add the rest of the egg whites.
Step 6:
Let the chocolate mousse rest in the fridge for at least 2 hours. Just before serving, add a pinch of fleur de sel!
